Prawn, leek and barramundi gratin

A quietly luxurious dinner for two, of prawns, prime NT barra, smothered leeks and roast sweet potato, bathed in a light, creamy velouté sauce – with a lobster stock base, no less - and topped with a crunchy herbed panko crust.
